 Thai Vegetable  Stir Fry


Ingredients

  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 heaping tablespoon peanut butter
  • 1 garlic clove finely chopped
  • 2 teaspoons olive oil
  • 500 grams mixed vegetables  (I use Thai Mix and I add about 200 grams sliced mushrooms)

How To:

  • Combine soy sauce, sugar, peanut butter, garlic clove in bowl
  • Heat oil in large skillet, add vegetables and cook until just tender.
  • Remove from heat and add sauce mixture, cook for another 2 minutes.  
  • I serve with rice and I spoon a bit of sauce over the rice.
