  •  2 tablespoons vegetable oil
  •  1 onion, sliced
  •  2 carrots, chopped
  •  2 celery stalks, chopped
  •  2 cloves of garlic, minced
  •  2 cups beef broth
  •  1 cup red wine (optional)

Instructions:

  • Preheat your oven to 325°F (163°C).
  • Season the roast with salt and pepper and spices to taste.
  • Heat vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat.
  • Sear the roast on all sides until browned.
  • Remove the roast from the pot and set it aside.
  • Add onion, carrots, celery, and minced garlic to the pot and sauté until softened.
  • Pour in beef broth and red wine (if using) and bring to a simmer.
  • Return the roast to the pot, cover with a lid, and transfer to the preheated oven.
  • Cook for about 3-4 hours or until the roast is tender and easily shreds with a fork.
  • Remove the roast from the pot and let it rest for a few minutes before slicing or shredding.
  • Serve with the vegetables and flavorful juices. Enjoy!

Tips:

  •  Preheat your oven to the recommended temperature before placing the roast inside.
  •  Use a meat thermometer to ensure the roast reaches the desired level of doneness.
  •  Let the roast rest for a few minutes before carving to allow the juices to redistribute.
  •  Season the roast generously with salt and pepper, and consider adding herbs or spices for extra flavor.
  •  For even cooking, use a roasting rack or elevate the roast on a bed of vegetables.
  •  Baste the roast with its own juices or a flavorful marinade during the cooking process.
  •  Experiment with different cooking techniques, such as searing the roast before roasting or using a slow cooker for a tender result.
