This simple fruit tart works with just about any fruit that has stones. I also use frozen mixed berries from Walmart or Superstore when I am in the mood. It even works with sliced apple to which I add a crumble topping. This recipe allows the full flavour of the fruit and especially the tart plums. The taste is both tart and sweet.
Ingredients:
- 2 1/2 cups flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- A pinch of salt
- 1/2 cup (or 1 stick) of butter cut into small cubes
- 2 eggs
- 3 tablespoons milk
- 1/4 cup breadcrumbs (You may need a little more depending on the moistness of the fruit used, because the breadcrumbs will absorb excess moisture.)
- 2 pounds of pitted and at least quartered (depending on the size) plums.
- OR alternatively, about 500 grams mixed berries,
- OR 2- 28 ounce cans of sliced peaches.
How to:
- Mix the flour, sugar, baking powder and salt together in a large bowl.
- Add the butter and blend the mixture together with your fingers until the mixture forms an oatmeal-like texture.
- Beat the eggs and milk together and stir into the flour mixture with a fork until you have a rough dough.
- Knead gently until smooth.
- Cover in plastic wrap and chill in the fridge for at least an hour.
- Roll the dough out in a 9 x 13 inch lightly greased pan, creating a slightly raised edge. (my pan is 10 x 13) Sprinkle with flour as needed to roll it out.
- Prick the dough lightly throughout with a fork
- Sprinkle the breadcrumbs evenly over the dough.
- Arrange the fruit neatly on top of the dough, cut side up.
- Bake in preheated oven at 400 degrees F for 35 to 40 minutes. The edges will be golden brown.
- Remove from the oven and sprinkle liberally with the sugar as soon as it comes out of the oven.

This is great hot and fresh, but it also freezes well if cut up and wrapped in smaller portions. You can thaw in the microwave for about 25 seconds and add ice cream or whipped cream topping if desired. I often make 2 of these at once; one with peach and one with plums or berries.
I make a crumble topping to bake with the tart, and I skip the sugar sprinkle at the end. Use peeled and cored apple slices and here is a simple recipe for the crumble:
- 1/2 cup (or 1 stick) of butter
- 1/2 cup sugar
- 2 cups of flour (give or take a bit)
- A few squirts of lemon juice and/or lemon rind.
- Mix the ingredients and add flour as needed to make crumbly Spread over the apple tart prior to baking.
