This is another one from Jehane Benoit's Encyclopedia of Cooking. It's easy but it takes about 90 minutes of cooking time in total. So I would start this well before the potatoes, noodles, pork chops, or whatever you choose to serve with it. I have included a few suggestions at the end.
I couldn't find any decent photos of this version on the internet, so I'll post a photo when I make this again. (I did take one photo, but its not the finished meal) This version is yummy and different from your normal fried green tomatoes.
Ingredients:
- 4 tablespoons butter
- 8 tomatoes in thick slices (the recipe calls for green tomatoes, but it works well with red too)
- 4 onions in thick slices
- 3 apples peeled, cored and in thick slices
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 whole clove
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon dry mustard powder
- 1 tablespoon sugar
- 1/2 cup water
How to:
- Melt the butter in a large skillet
- Add all the ingredients except the water. Mix well
- Cover and simmer on medium for 20 minutes.
- Add the water and simmer for about an hour or until the mixture is thick, stirring occasionally.
Goes with:
This goes well with fried pork chops, minute steak, or sausages. It makes a great meal when accompanied by either noodles or boiled potatoes and a light green salad.
