My sister was on Facebook and looking for the recipe for Doris's carrot and raisin salad. It reminded me of this one, which is nowhere near as good, but it's simple and easy. If I have to settle for a place at the end of the pack for gourmet salads, I won't be beat for simplicity.
- Grate about 2 cups of peeled carrots (coarsely grated).
- Grate about 1 cup of peeled and cored apple (coarsely grated).
- Add a couple of tablespoons of chopped raisins.
- Add a squeeze of lemon juice to your preference.
- Mix all the ingredients with mayonnaise to your preferred consistency.
- Serve chilled.
