Belgian "Tuna in Peaches"


A recipe that you don't run into very often, but it's easy and kid friendly.  And they tell me that it's popular in Belgium. 

All you need is a can of peach halves, a can of tuna, and some parsley.  You can even dress it up on a bed of lettuce if desired. 

Mix a drained can of tuna, mix some parsley flakes, and mix with mayonnaise to taste.  Then spoon the mixture into the peach halves, chill, and serve.    

Nutritious healthy lunches or quick dinners don't get any easier than this.
