This is one of those recipes with endless possibilities, because you can use just about any filling you can imagine. This recipe should make about 4 servings of 2 crepes, for a total of 8 crepes.
I love them with fruit fillings topped with whipped cream.
Ingredients:
- 1 cup all-purpose flour.
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 teaspoon salt
- 2 tablespoons melted butter
How to:
- Wisk the flour and eggs together in a medium mixing bowl.
- Stir in the milk and the water.
- Add the salt and the butter and beat the mixture until smooth.
- Spray or lightly coat the frying pan (I would use an 8 to 10 inch pan max) with cooking oil.
- Heat the frying pan to medium.
- Use about 1/4 cup of crepe batter for each crepe, tilting the pan in a circular motion.
- Cook each side until golden brown.
- Hint: use wax paper between the cooked crepes to prevent sticking.
